As the month of October roles in, the air begins to grow cool and crisp in the midwest. Its officially apple harvest season. Whether you’re a die hard baker looking to score apples for an old apple pie recipe, a novice gardener (like my self) and feel that flutter of joy when you see a row of trees in the orchard waiting to be picked, or you’re just there for the apple cider donuts (also like myself). Any reason is a good reason, if you ask me, to head down to your local orchard for a day spent apple picking. From gala to jonagold, golden delicious to granny smith. There is an apple for anyones pallet.

There are a number of recipes you can whip up with apples, but nothing makes fall feel cozier than apple pie baking in the oven. Well, I’ve got just the recipe. I found it a few years ago, and after trying it, I was hooked! It’s my only go-to apple pie recipe. Apple pie by Grandma Ople can be found in the link below. Despite the few changes I’ve made to the recipe, this apple pie is sure to be a family favorite. 

 

Ingredients

Pie Crust

  • 2 1/2 cups all-purpose flour
  • 1/4 cup all-purpose flour for rolling
  • 16 tbsp (2 sticks) unsalted butter cold 
  • 1 tsp. salt
  • 1 cup ice water

 

 

  • In a large bowl, using a sifter combine flower and salt. Add cold butter. Using a pastry cutter or large fork, blend butter into dry ingredients. Use hands to break up butter sparingly. Add ice water gradually 1 table spoon at a time. Once mixture begins to stick when pinched, knead the dough into a ball and cut in half. Wrap in plastic and place in fridge. 

Sauce

  • 8 tbsp unsalted butter
  • 1/2 cup brown sugar
  • 1/3 cup granulated sugar
  • 3 tbsp all-purpose flour
  • 1/4 cup water

 

  • In a sauce pan, melt butter and add flour to form a paste. Add brown sugar, granulated sugar, and water. Stir while bringing to a boil. Reduce heat to low and simmer for 5 minutes. 

Filling

  • 6-8 honey crisp apples washed and dried. 

 

  • Peel and core apples. Thinly slice and set aside. Pre-heat your oven to 425°F (220°C). 

Combine Ingredients

Remove pie crusts from fridge and roll each one into a sphere. Place one into the pie plate and gently allow it to settle into the plate. You don’t want to stretch the crust. Remove excess edges using a knife. Pour apples into the plate. Remove butter/sugar sauce off heat, and pour half over apples. Using a fall or foliage cutter, cut out pieces from second sphere. Place pieces over the apples leaving gaps between. Pour remaining sauce slowly over top of foliage crust.

 

Bake in the oven at 425°F (220°C) for 15 minutes. Reduce oven temperature to 350°F (175 °C). Cover top of pie with aluminum foil to protect decorative crust from burning. Bake for additional 35-45 minutes or until apples are soft. 

Serve warm with ice cream or simply with a little powdered sugar sprinkled over the top. Enjoy!
