Tip: This recipe calls for very cold butter. Do not remove butter from fridge until you are ready to use it. The more you handle the dough the less flaky your crust will be.

Stack two quarters next to pie crust to measure a 1/8 inch dough, the perfect thickness for flaky pie crust.

Ingredients
Pie Crust
  • 3 cups of flour
  • 1 teaspoon of salt
  • 1 tablespoon of sugar
  • 12 tablespoons of salted butter, cubed
  • 5 tablespoons of salted butter cubed, in place of shortening OR 1/3 cup of shortening
  • 1/4 cup ice water
  • 1 egg yolk and 1 teaspoon of water combined and set aside
Apple filling
  • 5 granny smith apples
  • 2 teaspoon of sugar
  • 3 tablespoons of brown sugar
  • 4 additional teaspoons of brown sugar, set aside
  • 2 tablespoons of flour or cornstarch
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground nutmeg
Directions
  1.  In a large bowl, combine 3 cups of flour, sugar, and salt. Add 12 tablespoons of cold butter and extra 5 tablespoons of cold butter or shortening.
  2. Cut the butter and dry mixture using a pastry cutter or fork until mixture resembles coarse crumbs. Adding ice water as needed.
  3. Form two disks and wrap with plastic.
  4. Refrigerate crust while preparing apples. 
  5. Peel and slice apples.
  6. In a large bowl, combine sliced apples, flour, sugar, cinnamon, nutmeg, and 3 tablespoons of brown sugar.
  7. Gently toss apple mixture and set aside. Preheat oven to 350° F.
  8. Remove one pie crust disk from the refrigerator. On a lightly floured surface, use a lightly floured rolling pin, to roll pie into a sphere roughly 1/8 inches thick.
  9. Cut out 4 spheres of dough. Add apple filling. Top additional teaspoons of brown sugar set aside earlier to each pie, 1 teaspoon per pie.
  10. Use remaining dough to cut out 4 more spheres to cover mini pies. Use a fork to seal edges.
  11.  Lightly brush mini pies with egg yolk and water mixure. Cut slices into the top of the pie crust.

Bake mini apple pies for 40-45 minutes at 350°F until edges of the crust are golden brown, and the filling is bubbling. Allow pies to cook for a minimum of 20 minutes. Serve warm or at room temperature!
